If you’ve been searching for the perfect kettle corn recipe, I promise you’ve landed in the right spot — this classic version is the one I keep coming back to, again and again.

Because I literally wrote the book on popcorn this summer, and I was up to my eyeballs in kernels! We’re still about a year out from publication, but all sorts of fun stuff are happening behind the scenes. Now that the grind of writing it the first time around is done, it’s time for the fun stuff. Edits are in process, photographs are being taken, the cover design is happening. It’s all very exciting and completely surreal.

Writing A Cookbook Changed How I See Every Recipe

In fact, the whole experience so far has really made me stop and think about the experiences behind other cookbooks. I find myself flipping through pages and instead of thinking about the recipes, I’m wondering, “I wonder if the author picked out this color scheme?” “Hm. This one has an introduction that tells a personal story, but this one has an introduction that discusses baking techniques… what’s the best way to write an introduction?” “I wonder if she ever emailed really stupid questions to her editor?” “How did she feel about this photograph?”

It’s totally changed the way I look through a cookbook and given me a whole new perspective on the finished product. Because that’s how I see a cookbook now — as a series of projects leading up to a finished product. Right now I’m seeing all the pieces of my own book start to take shape and come together, but it’s still so hard to imagine a completely finished book with my name on it. It’s kind of like comparing 17 recipes celebrating cinnamon to one single finished collection — so many little pieces, so much work, before it finally feels whole.

Why This Is The Best Kettle Corn Recipe You’ll Ever Make

In the meantime (while I’m holding my breath and crossing my fingers that the fine folks at my publishing house don’t change their minds and run in the other direction), how about some popcorn?? This recipe is my very favorite from the book. Classic Kettle Corn has always been my very favorite way to eat popcorn, and 75 recipes later — nothing’s changed! I still love the crunchy, crispy, sweet, buttery flavor that kettle corn has to offer. It’s so, so easy to make, and about a MILLION times better than the microwave variety you’ll find at the grocery store.

Homemade kettle corn really only needs a handful of things: popcorn kernels, oil, white sugar, and a pinch of salt. That’s it! No weird additives, no mystery butter flavoring packets. Just a large pot, medium heat, and a little patience while that sugar mixture works its magic on every kernel. Honestly, once you’ve made it yourself, you’ll wonder why you ever bothered with the bagged stuff.

Tips For Perfect Homemade Kettle Corn Every Time

The first step to great kettle corn is picking the right pot. You want something heavy-bottomed so the sugar mixture heats evenly without scorching — a large pot with a lid is non-negotiable here, trust me. Crank the heat up high (we’re talking high heat, not a gentle simmer) and give the pot a good shake every few seconds once the kernels start popping. This keeps the sugar from burning onto the bottom and makes sure every single piece gets that gorgeous golden, crackly coating.

A lot of people ask me on message boards why their kettle corn turns out sticky instead of crisp, and it almost always comes down to one thing: not getting it onto a baking sheet or cookie sheet fast enough to cool and separate. The second the popping slows down, dump it out in a single layer so it can crisp up as it cools. Letting popcorn sit in a warm pot is basically asking for a big, sad, sticky clump.

Storing And Serving Your Kettle Corn

Once your kettle corn has cooled completely to room temperature, toss it into an airtight container to keep that crunch locked in. It’ll stay fresh and crispy for several days, though in my house it’s lucky to survive a single time before it’s completely gone. If you want to get fancy, this base recipe is endlessly customizable — try a dash of cayenne pepper for a sweet-and-spicy kick, or swap in brown sugar instead of white sugar for a deeper, almost caramel-y flavor.

If you’re in a popcorn mood (and really, who isn’t?), this is also the perfect jumping-off point for other treats. I love dressing up a batch with melted chocolate for something like chocolate covered potato chip clusters, or going all out with a batch of caramel caribou popcorn when I want something extra indulgent. And if you’re into mixing sweet treats, don’t sleep on a batch of salted caramel brownies for the same party spread.

A Few Fun Kitchen Confessions

Can we talk about how funny it is that my brain works in weird comparisons lately? Writing a cookbook has me thinking about recipes the way I imagine someone building neural networks thinks about data — tons of little inputs, endless tweaking, and a whole lot of faith that it’ll eventually come together into something that makes sense. I’ve joked with my husband that testing recipes over and over is basically like running unit tests, except instead of code breaking, it’s my kitchen smelling like burnt sugar. And when I’m stuck on a recipe, I go searching for the most related paper (or in my case, the most related old church cookbook) to see how other people solved the same problem.

It’s such a different kind of creativity than, say, baking a batch of Samoas popcorn or whipping up chocolate chip cookies, where you measure your dry ingredients into a medium bowl, cream your butter and sugar in a small bowl, and know almost exactly what you’re going to get. With cookie dough, you can check the nutrition facts, scoop it with a measuring cup, and pop it onto a cookie sheet with total confidence. Popcorn, on the other hand, keeps me on my toes every single time — and honestly, that’s part of why I love it so much.

You’re going to love this kettle corn recipe!! It’s sweet, it’s crunchy, it’s ridiculously easy, and it’ll make you feel like a popcorn genius the second you pull it off that wire rack of a cooling rack (or, let’s be honest, straight off the baking sheet while it’s still warm). Whether you’re making it for a cozy movie night or scooping it into bags for a party favor, this is the kind of snack that disappears fast. Go make a batch — I promise it won’t last long!

{"@context":"http://schema.org","@type":"Recipe","name":"Classic Kettle Corn","author":{"@type":"Person","name":"SomethingSwanky.com"},"datePublished":"2020-02-17","image":["https://www.somethingswanky.com/wp-content/uploads/2013/11/DSC_0423-edited-title-480x480.jpg","https://www.somethingswanky.com/wp-content/uploads/2013/11/DSC_0423-edited-title-480x360.jpg","https://www.somethingswanky.com/wp-content/uploads/2013/11/DSC_0423-edited-title.jpg","https://www.somethingswanky.com/wp-content/uploads/2013/11/DSC_0423-edited-title-480x270.jpg"],"recipeIngredient":[" 1/4 cup vegetable, canola, or coconut oil\\r"," 1/2 cup sugar\\r"," 1/2 cup popcorn kernels\\r"," 3 Tbsp. butter, melted\\r","salt for sprinkling"],"recipeInstructions":[{"@type":"HowToStep","text":"Prepare a space for the popcorn to cool on a silicon or parchment liner.
