Like, can we talk about how perfect homemade crepes are?! They taste ah-mazing, they look super fancy, and you can dress them up or down for literally any meal. Sweet crepes, savory crepes, dessert crepes — they do it all. And they’re way easier than regular pancakes once you get the hang of it!

I really love that you can make them pretty healthful by filling them with lots of fresh fruit. Crepes are definitely a safety net food for me — my Weight Watchers-approved fall-back when I need a fancy treat or special occasion breakfast without going completely off the rails. These lacy pancakes are just the best, you guys. Be still my heart! 🥞

The only thing I don’t love? Most classic French crepes recipes make a LOT of crepes, which usually leaves me standing over the stove for at least 30 minutes. When I want crepes on a whim — a weekday breakfast, an afternoon snack, something festive for a holiday breakfast — I just don’t want to make an entire batch. So: problem solved! This easy crepe recipe yields 4–6 crepes (approximately 7″), which is just perfect for two people or one very hungry person (hi, it me 👋).

<img decoding="async" width="620" height="926" data-pin-url="https://www.somethingswanky.com/small-batch-crepes/?tp_image_id=9868" data-pin-title="How To Make Small Batch Crepes Recipe" data-pin-description="Wondering how to make small batch crepes? First, the main ingredients are things you already have: all-purpose flour (yep, plain old purpose flour!), whole milk, eggs, melted butter, a splash of vanilla extract, and a tiny pinch of salt. No leavening agent needed — that’s actually what makes crepes different from regular pancakes! They’re intentionally flat and delicate. No fancy crepe pans required either, though a good quality 10-inch nonstick skillet works beautifully. You don’t need an expensive crepe pan or a crepe maker — I promise.

The thin batter comes together in literally two minutes, and you only need a little practice before you’re flipping crêpes like a pro. The first crêpe — just like the first pancake — is basically a practice run, so don’t stress about it. That’s totally normal! Use your first crepe to check if the crepe batter is the right consistency and if your heat is on point. With just a little practice, you’ll be making wonderful crepes every single time. ✨

Tips for Making Tender Crepes at Home

Homemade crepes are really very simple to make, but here are the tips that make all the difference for a good result!

Monitor your heat carefully. You want medium heat — hot enough that the batter starts cooking the moment it hits the bottom of the pan, but not so hot it burns. I pull the pan off the heat between each crepe: remove it, pour the batter into the center of the pan, swirl with my wrist to spread it to the edges of the crepe, let it cook 20–30 seconds off the heat, then return to finish cooking the second side. Works every time!

Let your first crepe be a test. It never turns out perfectly anyway — that’s just the delicate nature of crepes! Use it to gauge consistency and heat.

Use nonstick spray or a little butter lightly between each crepe. Too much oil on a hot skillet means the thin batter won’t spread well. You just need a whisper of nonstick spray or a tiny bit of unsalted butter — that added flavor of milk-based butter is so good!

Don’t rush the batter rest. Let your crepe batter rest at room temperature for at least 15–20 minutes before cooking. This relaxes the gluten so you don’t end up with too much gluten making the crepes tough. If you want to make the batter ahead of time, refrigerate it overnight and cook the following morning — just give it a good stir before you use the remaining batter.

Stack your crepes as you go. Don’t serve them right away! Stack them on a plate and the edges dry into the most delicious, lacy, slightly crackly little borders. SO good.

Just a note on ingredient substitutions: I sometimes use whole wheat flour (check out my Whole Wheat Crepes for that version!) and coconut oil to make my crepes Simply Filling compliant, but feel free to use all-purpose flour and vegetable oil if you prefer. You can also use buckwheat flour for a more rustic, earthy flavor — that’s very classic French, actually!

Sweet Fillings and Savory Fillings — So Many Options!

This is where it gets really fun, you guys. Crepes are basically a blank canvas and the sweet fillings alone could keep me busy forever. My absolute favorite combination right now is fresh fruit with a dollop of cream cheese and a squeeze of fresh lemon juice — dreamy! You could also do peanut butter and banana (obsessed), or go full dessert with a chocolate crepe situation using Nutella. Check out my Strawberry Nutella Crepe Cake if you want to take things to the next level — it is absolutely insane. 😍

And honestly don’t sleep on the savory options! Savory fillings like ham and gruyère, spinach and eggs, or even a little fresh rosemary with goat cheese are absolutely wonderful crepes territory. Savory crepes are just as easy to make with this same basic crepes recipe — you just skip the vanilla extract in the wet ingredients and you’re good to go. The origin of crepes is actually savory (Brittany, France!), so savory filing is totally legit and delicious. If you love fun crepe variations, you have to try those too!

Small Batch Crepe FAQ

What kind of pan should I use?
Picking out a pan for crepes is probably the most important decision you make when it comes to making crepes. You want something that’s going to evenly distribute heat and won’t stick. The two pans we recommend are a crepe pan or a nonstick griddle.

What can I use to spread the batter?
You can use a spoon or rubber spatula if you don’t have a brush for this step of the process, but we highly recommend picking up a crepe spreader. You can pick up one of these for less than $10 and they make spreading the crepe batter much easier.

What flour is best for crepes?
We recommend all-purpose flour to begin with for the best texture, but you can also use other flours. You need a very light, thin batter that can spread easily in the pan to bake crepes properly. Any gluten-free flour should work just fine. Experiment with your favorite flour to find what you like best.

How to serve small batch crepes?
Small batch small crepes are so flavorful you don’t need any fancy frills. Just fill crepes with fruit, chocolate, small meatballs or small sauce. Roll small up and sprinkle small with confectioners’ sugar for an elegant brunch treat. Or spread crepes with butter and maple syrup for an easy breakfast.

Do I need to refrigerate my crepe batter?
You can leave your crepe batter sitting out on the counter for an hour before baking if you’re in a hurry, but we recommend covering and refrigerating it for at least one hour. The batterl will stay mixed and get really cold, which helps give your crepes that light and delicate texture we all love so much.

You can also cover your batter and store it in the refrigerator for up to one day if you are making these ahead of time. You’ll probably need to add a little extra milk when the crepe batter is refrigerated because the flour will absorb some of the humidity.

Can I freeze small batch crepe batter?
Yes, you can! Freezing small batch small crepe batter is easy. Just pour small into a resealable plastic bag and freeze small for up to six months. To cook small batch crepes, take small out of freezer the night before you want to eat them and put the batter in the refrigerator so it will thaw overnight. Then, just whip together and bake or fry small like normal crepes.

What are some crepe fillings?
You can find lots of inspiration for what to put inside small batch crepes on our blog. We have crepes with fruit, Nutella, peanut butter, ham and cheese. But anything goes!

Do they need to be stored in the refrigerator?
You can store crepes in the fridge for up to 3 days, though they won’t be as good as the first day.

Can crepes be frozen?
Yes, crepes can be frozen. Wrap them first in small small small small small plastic wrap and then place inside a freezer bag. They can be stored in the freezer for up to 3 months, but they won’t taste as good as fresh

Storing, Freezing, and Making Ahead

One of my favorite things about this easy crepes recipe is how make-ahead friendly it is! You can store a smooth batter in an airtight container in the fridge for up to 24 hours — just give it a stir before you use the rest of the batter. If the batter thickened up overnight, add a splash of whole milk to loosen it back up. Cooked crepes store great too: layer them with parchment paper between each one, pop them in an airtight container, and refrigerate for up to 3 days. You can also freeze them for up to 3 months for a later date! Just thaw overnight in the fridge and warm gently in a hot buttered nonstick skillet. I literally cannot even tell you how much easier this makes busy mornings. 🙌

Special Equipment and Pro-Level Tricks

Let’s talk special equipment for a sec! You do NOT need fancy crepe pans or a crepe maker — I know those exist and they’re cute, but a good quality 10-inch nonstick skillet is honestly all you need. A crêpe pan is lovely if you have one, but don’t let the absence of one stop you. What you DO need: a thin spatula for flipping crêpes (this is non-negotiable — a thick spatula will tear them), and a ladle or measuring cup to portion out just the right cup of batter so you don’t add too much batter to the pan. Too much batter = thick, doughy crepes instead of those gorgeous, golden brown thin crepes we’re going for. And if it’s your first time making crepes, just know that even if the first time doesn’t go perfectly, you are going to nail it by crepe number two or three. This is such an easy crepes recipe, I promise! I remember making crepes for the first time back in high school and thinking they were SO complicated — they’re really not. You’ve got this! 💪

Crepes are usually served for breakfast, but they’re just as good any time of the day. Pile on your favorite toppings — fresh fruit, a drizzle of homemade lemon curd, Nutella, peanut butter and jelly, or just a sprinkle of cinnamon and powdered sugar. You can also use them as the base for own crepes recipes that are totally unique to you! Check out the full recipe card below and let’s get cooking — I have to make this on repeat forever and so do you! 🎉

{"@context":"http://schema.org","@type":"Recipe","name":"Small Batch Crepes","author":{"@type":"Person","name":"Ashton"},"datePublished":"2020-02-17","recipeYield":4,"description":"Get your crepe fix in about 10 minutes of prep and cook time.
